Ahhh it’s plus 26 today & with the temps rising, someone’s having a BBQ! Be the perfect guest & bring one these fun summer (meanwhile it’s only Spring but I love it) salads…
Lemon Greek Salad
1 English cucumber, cubed
1 pint grape tomatoes, halved
1/2- 1 cup mixed olives (I get the deli mix), large pitted ones sliced
1 small block feta cheese, cubed
1/2 jalapeño (seeds removed), thinly sliced
1 tbsp lemon zest
3-4 tbsp avocado oil
1 tsp dried oregano
Salt & pepper
Chop your veg into a big bowl, mix gently with the olives & feta. Add lemon zest, oil & seasoning. Toss lightly then enjoy!! The bright flavour the lemon zest gives is so yummy & ends up perfectly balancing the heat from the jalapeños! Get in to the Greek with this one!!

Tomato & burrata basil oil salad
1 pint mixed grape (heirloom) tomatoes, halved lengthwise
1 small burrata (or use fresh mozzarella or even ricotta)
1 bunch basil
1/4 cup avocado oil
2 tsp fresh lemon juice
Salt & pepper
Drizzle of balsamic vinegar (optional)
Place the tomatoes on a platter, sprinkle with salt & pepper. Rip burrata in pieces & lay on top of the tomatoes. Again season with a bit of salt & pepper (drizzle a little balsamic oil too if you want)…
In a small mixer, whiz basil and oil. Season with salt & pepper to taste. Drizzle oil on salad. Use reserve oil as salad dressing or drizzled over pasta.
