Chewy or crunchy, this update on monster cookies is a must try remix!! It’s flour free, has four types of chocolate chips & I even snuck in some chia seeds…and none of the kids noticed!! Hahaha!! Shhh..
MK’s Mmm..monster cookies
1/2 cup butter, softened
1 1/2 cups peanut butter
1 cup brown sugar
1 cup white sugar
1 tsp vanilla
1/2 tsp salt
2 tsp baking soda
4 cups old fashioned oats (large flakes)
1/2 cup quick cooking oats
1 tbsp chia seeds (optional)
3/4 cup white chocolate chips
1/2 cup semi-sweet chocolate chips
1/2 cup milk chocolate chips
1/2 cup peanut butter chips
Preheat over to 350. Grease or line two baking sheets (with a Silpat mat which works best or parchment paper – never wax paper).
In a large bowl, whip butter until creamy then add peanut butter and whip again! Add the sugars and beat until well combined. Add eggs one at a time, mixing gently between. Add vanilla.
In a separate bowl, combined both oats, salt & baking soda. Add to wet ingredients. Mix well then add the chia seeds and chocolate chips!
Drop cookie dough by tablespoons 2 inches apart then bake for 8-12 minutes…around 8-9 for chewy cookies or like 11-12 for crunchy ones!! Either way you’ll love them!!!
