Sunday night dinner idea! Dill and pumpkin seed crusted salmon meets caramelized roasted veg for dinner!
Season your fish with salt & pepper then top it with dill and pumpkin seeds. Press the seeds to stick then fry it crust side down in a cast iron skillet.
Toss your veggies (I used Brussels sprouts, yellow beet and carrot) in coconut oil, salt and pepper, thyme and then roast in a desperate cast iron skillet (my go-to pan). Half way through, toss in a scoop of honey, a drizzle of balsamic vinegar and a nub of butter. Roast until brown and toasty! The brown bits mean caramelized flavour so be sure to roast them good!!
Boom dinner! Done.
