Coconut cream fruit bowl

Good morning breakfast! This coconut cream fruit bowl is the perfect light Saturday morning breakfast before I pig out at brunch later! Haha! Chop up whatever fruit you like – I used strawberry, blueberry, raspberry & pineapple – then top with coconut cream, chia seeds & nuts.

To make the coconut cream, refrigerate a can of coconut milk for a couple hours (preferably overnight) then carefully open & scoop out the top of the hardened cream. Leave the coconut water (use in your next smoothie or drink it straight up)! 

Whip the cream with a whisk or beater. Add a touch of vanilla & a sparkle of sugar if you want. 

Top fruit with the cream then add whatever crunch you like – toasted coconut, chia seeds, crushed almonds, flax seeds, pumpkin seeds…whatever you like! 

Yum!
