Roasted veggie fries with creamy dill dip

After spending the weekend in Vancouver in some delicious vegetarian restaurants, I was inspired to make a veg dish for dinner tonight! Roasting vegetables is my favorite ’cause it brings out a sweet & bold flavour only roasting brings! I chopped the veg up in match sticks like French fries and roasted them with a little olive oil & salt and pepper. I topped it with a creamy yogurt dill feta dip and it was seriously tasty!!! Try it as a side dish or a main and you’ll still be satisfied! 😉


Roasted veg fries with dill dip 

1 Russet potato, julienned 

3 carrots (I used Rainbow carrots), julienned

1/2 large zucchini, julienned 

1/2 head broccoli, cut lengthwise with stem 

3 green onions

Not a fan of all the above or want to toss in something else? Try pepper strips or julienned parsnip, long green beans or squash and it would be just as good!

Pre-heat the oven to 400 degrees and toss the veg in olive oil and salt & pepper before roasting for about 30 mins – until they start turning golden brown. 

Top roasted veggie fries with dill dip and sprinkled feta! Yum! 


Dill dip with feta 

1/2 cup Greek yogurt (2%)

1 tbsp feta cheese, crumbled 

1 tsp dried dill

Salt & pepper to taste 

Mix in a small bowl. Keep any leftovers in the fridge for several days/as long as your yogurt expiry date.

Top your veg fries with the dip & enjoy!
