Meatless Monday just got a little more interesting!
Roasted vegetables get a twist stuffed inside peppers, squash, zucchini…you name it…you could do tomato, eggplant, potato skin style or with mushroom caps!
Add some quinoa, cous cous, wild rice, chick peas or beans. Top with cheese and bake!
Dice (leave the asparagus whole or it will over cook), season with salt & pepper and drizzle with olive oil then bake at 400 degrees for like 30 mins.
Mix cook cous cous with all the diced veg then stuff inside your semi pre-cooked veg. Top with mozzarella and bake!!
