So I topped my toasty bread with a thin layer of hummus, sliced cucumber, shredded carrot, spinach and smeered it with avocado! Salt, pepper and chilies were the flavour enhancers before sprinkling crumbled feta on top! All in all I think it came in at just under 200 cals -using 1 tsp hummus & 1 tbsp avocado – and it kept me full for nearly 3 hours!!! Total Keeper!! Although, next time I might add sprouts or shredded raw beet, maybe match stick yellow pepper or halved cherry tomatoes and fresh mozzarella! Mmm..
