Lazy Sunday mornings mean more time in bed & more time in the kitchen for a yummy breakfast! My yummy breakfast this morning = waffles! I had actually run out of full eggs but did have some egg whites in the fridge so I decided to try remixing it up & making them soufflé style! Cooked with just enough crispiness for waffle perfection! Topped with caramelized apples – done! Yum!
Apple cinnamon soufflé waffles
3 egg whites
3 tbsp melted butter
1/4 c milk
1/4 c quick cooking oats
1/2 c flour
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla
1 tsp sugar
For the topping:
1 gala Apple sliced
1 tbsp butter
1/4 tsp cinnamon
Makes two large waffles…
In a medium mixing bowl, whisk or beat the egg whites for a minute until soft peaks form. In another bowl, mix the dry ingredients. Fold the dry ingredients, the melted butter & milk into the egg whites. Don’t over mix.
Cook with your waffle iron until done & slightly crisp. (Keep cooked waffle in a 200 degree oven to keep warm while you cook the last waffle).
While the waffles cook, sautée butter, apples & cinnamon then top the waffles! Drizzle with syrup & enjoy!!
