Lasagna Love!

I’m pretty sure like everyone I know enjoys a big piece of lasagna…sooo it can totally be worth the effort for this baked noodle & tomato saucey layered goodness!!

Here’s how I make mine!!

Beef & Veg Lasagna

For the sauce:
(Or for a time saver, use a jarred sauce)!

1 tbsp coconut oil
1 small white onion diced
2 garlic cloves minced
1/2 green bell pepper diced
1/2 bunch asparagus diced, ends trimmed
1 cup fresh spinach chopped (or a a few frozen spinach cubes)
1 can diced tomatoes (I like the olive oil & herb tomatoes)
1 can crushed tomatoes
1/4 bunch fresh basil or 2 tsp dried
2 tsp dried oregano
1/2 tbsp steak spice
1/2 tsp dried chillies
Salt & pepper to taste
1 package lean ground beef (or chicken or turkey)

Vegetarians: omit the ground meat – add more veg like diced zucchini, more peppers like yellow or red…

Lasagna layers:

1 package oven ready lasagna noodles
2 large fresh tomatoes sliced thin

Lots & lots of grated cheese, I use mozzarella of course plus some Parmesan & sometimes even a bit of dill havarti or Gouda

Salt & pepper – seriously, salt & pepper almost every layer!!

Layer it all together then top it off with tons of cheese then bake for 40…yum, baked to perfection!

Let’s make it!!!!

So, for the sauce, sauté the oil, onions, peppers & garlic until soft, about 3-5 mins. Add the spinach but leave the asparagus until the end, it doesn’t take as long to cook and over cooked asparagus gets mushy 😦
Add the beef & spices then cook for another few minutes to brown. Don’t fully cook the meat as it will simmer with the tomatoes!…add those canned tomatoes then salt & pepper. Season to taste!
Cover the sauce and simmer for about 10 mins, stirring occasionally!
Add the asparagus, stir and simmer another 5 mins.
Remove from heat, taste and add salt as needed.

Preheat the oven to 375.

Time to assemble….

Spread just a little sauce on the bottom of a 13′ x 13′ baking pan then place on top your first layer of lasagna noddles (slightly over lap or break noodles to fit),
Next add a layer of the beef sauce – a little more than half,
Later on more noodles,
Top with sliced tomatoes then salt & pepper and about 1/4 of your grated cheese,
One more layer of noodles,
Last layer of sauce…
…..Top with remaining cheese!!!

Bake in that 375 degree oven for 40 mins until bubbly & hot!!

Let the lasagna cool for 5-10 mins then cut & enjoy!!!

A simple side of greens with olive oil & balsamic – whisked together, again with that good old dash of salt & pepper and yum – – dinner!!!!
