Peanut butter perfection in a cake!

I’m kinda obsessed with peanut butter & chocolate soooo when I saw the recipe for peanut butter cake on the Girl Who Ate Everything’s blog I was dying to try it!!! And for good reason, it’s a sweet, rich & soft cake with just the right amount of peanut butter yums!!…The cake melts in your mouth!! Try it! Try it!!!…it’s delish!

Peanut butter Cake

1/4 c creamy peanut butter
1/2 c butter
1 c water
1 c white sugar
1 c brown sugar
2 c flour
1 tsp salt
1 tsp baking soda
2 eggs
1/2 c butter milk*
1 tsp vanilla

Peanut butter icing:

1/2 c peanut butter
3/4 c butter
6 tbsp butter
1-2 c icing sugar
1 tbsp vanilla

Preheat the oven to 375. Grease a 9″ x 13″ pan & line with parchment paper (for ease of removal)..

In a small sauce pan melt the peanut butter, butter & water until it boils lightly. Stir well & remove from the heat to cool. In a large mixing bowl combine the sugars, flour, salt & baking soda. Mix well then add the eggs, milk, vanilla & peanut butter mixture. Mix well the pour into your prepared pan. Bake for 25 mins or until a toothpick inserted into the middle comes out clean. Cool on a baking rack.

To make the frosting, again melt the peanut butter, butter & this time milk until melted & mixed smooth! Remove from heat & add icing sugar 1/2 c at a time until a nice smooth icing consistency! Pour over the cake & enjoy!!!

*No butter milk? Use regular milk with a tsp of vinegar or lemon juice added to it
