Long weekend pancake stack

Who doesn’t love pancakes? Soft, fluffy & slightly sweet…these weekend treats are a sweet way to say good morning to a loooong weekend!!…

I made mine with ground flax seeds & Greek yogurt for a bit of a healthier approach! Make them small, add some fruit then stack ’em up!!!


Raspberry flax pancakes

1 c flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 c ground flax seed
1/4 tsp salt
1/2 tsp white sugar

Mix in a large bowl then add:

1 egg
1/2 c milk
1/4 c Greek yogurt
1/2 tsp vanilla (liquid or I use the Vanilla bean paste)

Mix until well combined, add more flour or milk as needed – – the batter should be pourable but thick, not too liquid!…

Pour on a heated greased, griddle then cook until bubbles form, flip then cook the other side until lightly browned!…I’d say about 3 mins a side…


Top with fruit during or after cooking then duh – lots of pure maple syrup of course!!!! Mmm…
