I was just at an event that had John Gilchrist speaking where he was talking about food trends: bacon, brussel sprouts, house-made pickles and…….kale! I love kale and one of my fav ways of eating it is kale chips! Crispy and oh so tasty, these little gems are super easy to make and worth the try!
1 bunch kale – ribs removed, trimmed into small bite size pieces
Approx. 2 tbsp olive oil
salt & pepper
Wash and dry the kale well. Toss kale with the olive oil (using more or less to ensure that all the pieces are nicely coated). Season with a bit of salt and pepper then place on a lined baking sheet. Bake in a 375 degree oven for 8-12 mins. Check up on them as they will burn easily. Take them out when they are slightly stating to brown. Cool completely, store in an air tight conatiner for up to a week!
Ooooh, like a bit more flavor? Try adding dried chillies or a touch of cayenne for a spicy version. Make you own flavor combo with rosemary, pepper, garlic or even parmesan cheese!! YUM!
