Cookies, cookies, cookies!!! I love them and who doesn’t love getting them?? Especially over the holidays cookies are a great gift on their own or with wine, hot chocolate and Baileys or with other home made treats! One of my holiday favorites – sugar cut out cookies!! I made these for my daughters Pirate themed birthday party but would be fab cut out like trees or snow flakes for the holidays! A recipe I found on http://www.allrecipes.com , try them! The best rolled Sugar cookies
1 1/2 c butter softened
2 c white sugar
1 tsp vanilla (If you can get Mexican vanilla I think it’s the best)
5 c all-purpose flour
2 tsp baking powder
1 tsp salt
*I bought decorative sugar which I sprinkled on the top!!
In a large bowl cream the butter and sugar until fluffy. Beat in the eggs and vanilla. Stir in the flour, baking powder and salt (I mix the baking powder and salt into the flour before adding). Pat the dough into large disks (makes it easier to roll), cover in plastic wrap and refrigerate for at least 1 hour (or overnight).
Preheat the oven to 400 degrees. Roll the dough on a well floured surface to 1/4” thickness. Cut cookies with cookie cutters and place on an ungreased cookie sheet (I always use my silpat mat underneath or parchment paper just so there is no risk of stickage). Sprinkle with decorative sugar if using.
Bake for 7-10mins (just until the sides start to slightly brown) – cool completely. Store in an air tight container for a few days or freeze them for up to 2 months.
