Love this granola (was a work in progress but I think I have now perfected it)….
…oh & it’s easy too!!!
In a large bowl melt 2-3 tbsp coconut oil with 1/4 c honey. Toss in 1 c oats, 1/2 c each raw cashews, almonds & sun flower seeds (use whatever nuts you like). Add 1/4 c dried blueberries (or raisins)…On a greased or lined baking sheet cook in a 325 degree oven for 15-20 mins…*stir granola every 5 mins & do not over cook.
Once nicely browned, remove from oven & toss in 1/4 c each dried cherries & toasted coconut (only takes about 3 mins in the oven or buy it toasted at Bulk Barn). Melt 2 tbsp honey, pour over granola then toss to combine – let cool. Store in a container…keeps for a week or two! Makes about 4 cups…
Sprinkle over yogurt, ice cream, eat with fruit or as a topping to angel food cake & whip cream…so, so! yummy!!!
