Dense, rich and ultra yummy…..say goodbye to gluten and hello chocolately goodness!! The texture is lighter than you would think but has a nice cake-ness to it…rich chocolate flavor and simple to make too…
I served it with chocolate vanilla swirl ice cream, toasted coconut, crushed toasted cashews & a nice drizzle of maple syrup…
Flourless chocolate cake
4 oz bitter sweet chocolate (use the good kind if you can – Lindt maybe?)..
1/2 c butter
3/4 c sugar
1 tsp vanilla
1/2 c cocoa powder
1 tsp salt
Line an 8′ pan with parchment paper then butter parchment. Melt chocolate & butter in a double boiler/bowl on top of a pot of simmering water or in the microwave (stirring in 30 sec intervals for about 1.5 mins) until smooth. Remove from the heat and whisk in sugar. Add eggs & vanilla, whisk well. Sift the cocoa powder & salt over chocolate mixture and whisk until combined. Pour batter into pan and make in a 375 degree oven for 25 mins. Cool then slice & serve – yum!
You could also serve it with vanilla ice cream & a berry compote (cook 1-2 cups berries with a touch of sugar for about 10 mins)…also yum!!!
