I had some left over homemade tomato sauce so I decided to layer sauce, tomato, refried beans and all the yummy burrito ingredients into a lasagna style burrito!!! I used corn tortilla shells (love them – I found them at Community Natural Foods)….so so yummy!!


Burrito lasagna 

1 recipe tomato sauce (or used canned sauce or your own version)

1 tbsp oil

1/4 onion diced 

1 package ground beef (VEG?? Use black beans or chunky diced veggies)

4-6 small tortillas 

1/2 can refried beans

1/2 jalapeno diced small (optional)

1 large tomato sliced 

1/2 c salsa (I used Pace Picante)

salt & pepper

(dried chillies optional)

1 cup shredded cheese (mix mozzarella with extra old cheddar, asiago with cheddar, parmesan with mozzarella or havarti and extra old cheddar – whatever you like)….

10-12 nacho chips crushed 

Sautee onion with oil under tender, about 3 mins. Add ground beef or beans & veg and cook until the meat or beans & veg are almost done. Add sauce and combine. Set aside.

Layer a 9′ x 9′ square pan with a tortilla (you may need to trim the edges or rip off pieces from another tortilla to make it fit evenly and nicely on the bottom of the pan). Add on top about 1/2 c sauce. Layer another tortilla shell. On top of that spread an even layer of refried beans (I spoon on large globs then spread)…Top with sliced tomato and jalapeno. Season with salt & pepper and chillies then add salsa on top. Add on top of that another tortilla shell. Top with remaining sauce….then layer on the cheese. Top cheese with crushed nacho chips then bake in a 375 degree oven for about 20 mins until cheese is nice & melty! 

I like to sometimes serve it with mixed greens, a diced avocado and fresh cilantro tossed together with a squeeze of lime….

…Another idea is to serve it with a homemade salsa by dicing up a large tomato, a bit of red onion, small handful of fresh cilantro, a little seeded jalapeno and tossing it with fresh squeezed or bottled lime….

I doubt you’ll have any left over but if you do it freezes nicely….
