Juicy and delicious….with crispy skin and a tender inside!

I roasted two farm chickens in the oven at 425 degrees for 1 hour then at 400 for another 30 minutes. I seasoned the raw chickens with salt & pepper, rosemary, dried red chillies and paprika – about 1 tsp each per chicken. Drizzle it with about a tablespoon or two of oil (I used ghee) then when it’s almost done drizzle some of the chicken drippings on top of each chicken then place under the broiler for 2 mins. Crispy skin and cooked to juicy when your meat thermometer reads cooked at 180 degrees. YUM!!
