I love my quesadilla with mozzarella cheese but decided to switch it up…this one I used Cheddar then filled it with a pre-cooked mix of diced onions, red bell peppers, black beans, spinach & zucchini…
Other cheeses I’ve used:
Aged cheddar & Parmesan
Mozzarella & Pepper Jack
Gouda & Havarti
Fill it with cooked rice, diced jalapeño, chopped tomatoes — whatever veggies and/or beans you like…hello quick dinner….
I serve it with salsa of course & a mixed green salad with diced avocado, chopped cilantro drizzled with fresh lime juice – no need for dressing!
