DINNER: Enjoy a rich classic – spaghetti & meatballs with a healthy twist – spaghetti squash! I love a good, rich bowl of spaghetti & meat balls but this alternative is just as satisfying. By subbing the noddles for spaghetti squash you literally cut out the most calories from the dish but keep the taste! The squash getting its name from the resemblance of spaghetti is a seriously fab exchange of calories for just as much taste & texture! Make your own sauce too, load it with veggies (think adding kale, fresh tomato or peppers) & save the calories for dessert!….

And for DESSERT why not eat your bananas! I made my coconut banana bread recipe made into muffins with an added healthy touch – ground flax seed (3 tbsp added into the recipe) and topped it with shredded coconut – and I bet you eat all the muffins in one day!!….

Spaghetti squash with meat balls stuffed with mozzarella cheese 

1 large spaghetti squash (or use regular spaghetti)

1 package ground beef (we use grass fed)

1/2 cup quick cook oats

1 egg

1/4 onion diced finely

2 garlic cloves diced finely

1 tsp each dried: oregano, basil, thyme, celery salt, onion salt, chilli powder, cayenne, seasoning salt & steak spice

Salt & pepper

1/2 cup mozzarella cheese – cut into medium size cubes

2 tbsp oil

Cut squash in half & roast in oven at 400 degrees or on the BBQ for about 30-40 mins until tender & stringy looking but not mushy.


Meanwhile in a large bowl mix meat, oats, egg, onion, garlic and spices – mix well. Roll into 2” balls. Make a small well in the middle of the meatball. Place cheese on top then fold over and re roll the meatballs so the cheese is covered inside.


Heat oil and sautee the meatballs turning carefully and searing (but not fully cooking) all sides until brown, about 5-7 mins.



Pour sauce (jarred or homemade sauce) and simmer the meatballs inside the sauce for another 10 minutes. Remove the squash from the oven and shred with a fork. Serve shredded spaghetti squash (or regular spaghetti of course) with sauce and meatballs on top. Cut open the meatballs and the cheese oozes out!
