The Joy of Cooking’s yummy pizza dough recipe..
In a large bowl mix 1 1/3 cup warm water & 1 package (2 1/4 tsp) active dry yeast, let stand 5 mins. Add 3 1/2 cups flour, 2 tbsp olive oil & 2 tsp salt. Mix, turn onto a floured surface & knead for about 10 mins. Place in a large oiled bowl, cover with plastic wrap or clean cloth – let rise in a warm place (warmed to 200 then turned off oven or near the fireplace like we do – haha); until doubled, about 1 – 1 1/2 hours. Punch down dough, divide in two rest again – loosely covered for 15 mins. Roll out to fit a round baking pan – greased & sprinkled with cornmeal (prevents sticking).
Toppings: zucchini, onions, spinach and mushrooms (sautee in a bit of oil first), tomato & black olives! We also do black forrest ham, pineapple & green pepper or pepperoni, green pepper & the sauteed onions…Top with mozzarella and parmesan cheeses!! But of course…Use your fav toppings!
Bake in a 425 degree oven for about 10 mins or until the cheese is super melty!!
