Brown butter oatmeal cookies & a remix

Following Anna Olsen’s recipe I made delicious and soft brown butter cookies that were super yummy!! I of course did a little remix and made it s’mores style and then also peanut butter chocolate style!!!

Anna Olsen’s Brown butter oatmeal cookies 

10 tbsp butter (after making it I suggest 11 tbsp)

2/3 cup light brown sugar

1/3 cup sugar 

1 egg

1/2 tsp vanilla 

1 3/4 cup rolled oats (not instant)

1 cup flour (she uses 3/4 all purpose, 1/4 brown)

1 tsp cinnamon

1/2 tsp baking soda

1/2 tsp salt

1/2 cup chocolate chips, raisins, coconut, chopped walnuts or a combo of..

Melt butter in a sauté pan over medium heat until bubbling subsides and butter browns, about 5 minutes. Strain butter through a coffee filter and cool to room temperature.

Beat butter with brown sugar, sugar and egg until smooth. Stir in vanilla. In a separate bowl, stir oats, flours, cinnamon, baking soda and salt to combine. Add oat mixture to butter mixture and blend. Stir in choice of chocolate chips, raisins, walnuts, and/or coconut. Drop by spoonfuls onto prepared tray and bake in the center of a 350 degree oven for about 7-10 minutes, until browned. Let cool for 5 minutes, then gently remove from tray onto a rack to cool completely.

Remix:

I held off on the cinnamon and divided the batter into two bowls. One bowl I added the cinnamon as the regular recipe calls (half the amount from the full recipe). The second bowl got 1/4 cup peanut butter & 1/4 cup chocolate chips. 

As an added remix I topped some of the original recipe cookies (making them larger) with s’mores style toppings: mini marshmallows, chocolate chips & a sprinkle of graham crackers…..sooooo yummy!!!!

This is what the brown butter will look like at room temperature, it will not be hard like regular butter.
