Pre-roasted the cut peppers (375 for 20 mins)..while baking I cooked up chopped onion, carrot, potato, zucchini, kale, tomato, sliced open spicy chorizo sausage (remove casing) and black beans. Salt, pepper, oregano, chilli powder, dried chillies and cumin spice it up. Fill peppers, top with mozzarella cheese and bread crumbs (store bought or homemade by blitzing dry bread)….Bake until cheese is melty…so yummy!!! P.S. Do a veg version without the meat and more veggies!!!
