Burrito pizza double-decker style!


I saw a photo on Pinterest of a layered burrito “pizza” – if you will, from Trader Joe’s soooo I decided to make my own!!…Not sure their recipe but here’s mine!!…


Burrito pizza

2 burrito shells (I used whole wheat flour ones)

1 tsp oil 

1/4 onion diced 

1/4 zucchini diced 

1/2 package ground beef, chicken or turkey (veg – omit)

1 tomato diced (divided – half for bottom layer, half for top)

1/4 cup salsa

salt & pepper

1 tsp cumin

1/2 tsp chilli powder 

1/2 tsp garlic powder 

1 tsp oregano 

1/2 can refried beans 

1 cup shredded cheese (I used a mix of aged white cheddar & jalapeño havarti)

1/4 cup sliced black olives

1/4 diced jalapeño, seeded (optional)

1/2 avocado (optional)

1/8 cup salsa to top (optional)

1 tsp chopped cilantro (optional)


Heat oil and sautee onion for 2-3 mins. Add zucchini and cook another couple of mins. Add ground meat and cook until almost cooked (about 5 mins). Add spices, 1/2 the chopped tomato and 1/4 cup salsa. Combine well and heat through. Remove from heat, set aside. Meanwhile, lay one burrito shell on a lightly greased baking dish. Spread refried beans on top. Top refried beans with meat mixture. Sprinkle half the cheese then layer on top the last burrito shell. Sprinkle the top with the olives, tomatoes and jalapeño if desired. Top with remaining cheese. Bake in 375 degree oven for approx. 20 mins – until cheese is nice and melty. Cool slightly before serving and top with salsa, diced avocado and a few chopped cilantro leaves. 

Double it & make two if you need to make more than 2 servings….or because it’s so good you may eat the whole thing!!!
