Not your ordinary Sunday breakfast!…..
BK’s Breakfast Bake
Makes breakfast for 4 in an 8′ glass baking dish:
4 pieces bread (regular, French or cheese bread…umm YUM)
2 hash brown patties defrosted (optional or add pre-cooked cubed potato)
1/4 cup milk
1 tomato, diced
1/2 cup spinach chopped
1/2 cup shredded cheese (mozzarella, cheddar, havarti…)
salt & pepper
Diced fresh or dried herbs (optional)…oooh or use steak spice
dried chillies (optional)
Grease a 9” baking dish well. Cube bread and place in bottom of baking dish. Cube potato hash browns , place on top of bread. Add diced tomato and spinach on top of potatoes. In a separate bowl beat eggs, milk and salt & pepper (add fresh herbs like parsley, basil or dill and then dried chillies if desired). Pour egg mixture over the bread mixture. Top with cheese and bake in a 400 degree oven for about 30 minutes or until eggs are set.
Serve with diced avocado on top, diced green onions or top with salsa and chopped cilantro or parsley.
This is super great to make for brunches or when you need to feed a crowd, increases very well to a 9” x 13” pan – just add more eggs and filling. Think 1.5 eggs per person, 1 piece of bread and 1 hash brown per person and as much veggies as you want…
Remix it by using diced bacon or ham for the meat lovers or chopped kale, diced onions, olives, chopped broccoli or pre-cooked chopped sweet potato rather than hash browns or potatoes….whatever you’d like!!
Sooooo yummy!! I always get excited on Sunday’s when my husband makes this for breakfast. Sometimes we have peeps over for brunch just to have another excuse to make it!! I’ve even used a single oven proof dish and made one for myself!
