Carrot cream cheese pineapple cupcakes

I found this Better Homes recipe and am making it again because it’s so yummy!! It’s a play on carrot cake but has a creamy pineapple cream cheese middle that is such a sweet surprise . Eat them as is or top with drizzled caramel or cream cheese icing…but of course I remixed it a bit so read on for the recipes…

Carrot cream cheese pineapple cupcakes

4 eggs

3 oz cream cheese

2 cups flour

2 cups sugar

2 tsp baking powder

1 tsp salt

1 tsp cinnamon

1/2 tsp baking soda

2 tbsp sugar

1 egg yolk

Dash salt

1/4 cup crushed pineapples, well drained

3 cups carrots shredded (about 6 medium)

3/4 cup veg oil

1 tsp vanilla

1/2 cup toasted walnuts finely chopped (optional)

Let the eggs & cream cheese sit to room temperature – about 30 mins. Line 24 muffin cup with paper bake cups. In a large bowl combine flour, 2 c sugar, baking powder, 1 tsp salt, cinnamon and baking soda. In another bowl cream with a mixer cream cheese with 2 tbsp sugar until combined. Beat in yolk, dash of salt then fold in pineapple. In another bowl mix the 4 eggs, carrots, oil & vanilla. Add egg mixture to flour mix. Stir to combine. Drop a small tbsp of batter in each muffin cup. Top with a small tsp of cream cheese mix. Top them off with remaining batter (and 3/4 tbsp per). Bake at 350 degrees for 15-18 mins; toothpick will come out clean when inserted and removed. Cool then…

Top with……

Cream cheese icing

8 oz cream cheese softened

1/2 cup butter

3-4 cups icing sugar 

1 tsp vanilla

2 tbsp milk (or for this recipe pineapple juice)

Beat cream cheese and butter until well combined. Add icing sugar one cup at a time until well combined. Add vanilla and milk or pineapple juice. 

Spread cream cheese on cooled cupcakes then roll each edge in toasted chopped walnuts then sprinkle cupcakes with cinnamon if desired. 


Drizzle with caramel 

1/2 cup butter 

1 cup brown sugar 

2 tbsp milk 

On low heat melt butter and brown sugar, whisking occasionally. Slowly add milk while whisking. Drizzle caramel over cooled cupcakes immediately as drizzle with harden slightly when cooled.

    This is great. I love cupcakes or Mini cakes as as I call them. Also you can call this one a Remix…I have had carrot and pineapple as a salad. But in a cake? I never had. I will be making this one. Thanks for sharing.
