For my birthday today I thought posting my favourite party recipes would be most appropriate. These are great for parties, pot lucks or a night of appies…oh they’re some my most requested recipes….
1 package frozen chopped spinach, thawed and well drained (I just squeeze the spinach until no more liquid drips out)
1 package Knorr vegetable soup mix (dried)
1 cup light sour cream or Greek yogurt
1/2 cup mayonnaise (I prefer that tangy zip of Miracle Whip)
1 can water chestnuts diced finely
3 green onions diced finely
salt & pepper to taste (careful on the salt as the soup mix provides a lot of salty flavour)
dried chillies (optional)
Mix chopped spinach with soup mix, sour cream, mayo, water chestnuts and onions until well mixed. Add salt & pepper to taste and chillies if desired.
Serve in a hollowed out sour dough or pumpernickle bread “bowl” or with nacho chips, cut veggies or crackers.
Dill Cheese ball
8 oz package cream cheese
1 1/2 cups cheddar cheese grated
1/2 cup chopped dill pickles
1/4 cup green onion chopped finely
2 tbsp mayo
1 tsp worcestershire sauce
1/2 cup chopped walnuts (if you have time, toast them in the oven or pan over low heat for 5 or so minutes until toasty – stir often)
1 tbsp fresh parsely or dill chopped finely
Comine the chesses, picles, onion, mayo and worchestershire sauce until combined. Roll into a large ball and place in the fridge to set (preferably overnight). In a bowl combine nuts and herbs. Once the cheese ball is set, roll in nut herb mixture.
Quiche by the dozen
1/4 cup milk
salt & pepper
1 tbsp fresh diced herbs or 2 tsp dried (or like Steak spice or seasoning salt)
2 tomatoes diced
1 green onion diced
1/2 cup cheese grated – cheddar, mozza, gouda…
Optional add-ins: bacon, green pepper, olives, diced zucchini…
Beat eggs with milk, s&p and herbs/spices. Placetomato & onion/add ins evenly in the bottom of ungreased small or medium muffin tins. Pour or scoop with a ladle the egg mixture on top filling the cups 1/2 full. Sprinkle with cheese. Bake in 375 degree oven for about 10-15 minutes until eggs are set.
1 can refried beans
2 American cheese slices (or use cheddar, velveta or mozza)
1/4 cup salsa
Optional toppings: sliced jalapeños, black olives, shredded iceberg lettuce, diced tomato, grated cheddar cheese, sour cream and more salsa
Mix beans with salsa & add cheese on top. Microwave in 30 second intervals stirring in between until well combined and warm. Top with lettuce and optional toppings. Serve warm with nacho chips, crackers or veggies.
…Ok now the yummiest ones….the sweet ones!
8oz package cream cheese, softened
1/2 cup brown sugar
1 bag skor bits
Combine softened cream cheese with brown sugar and Skor bits until well combined. Refrigerate for at least 4 hours, best overnight. Serve with fruit (yum granny smith apples, firm pears, strawberries..)..
1 cup un-popped popcorn/about 20 cups popped
1 cup butter
2 cups brown sugar
1/2 cup corn syrup
1 tsp baking soda
1 tsp vanilla
Pop the popcorn either in the machine or in a large pot over medium high heat with 1 tsbp oil – shake often & keep the lid on 3/4 of the pot (slightly open for steam to escape)…remove from pot. In the same pot stir and melt butter, brown sugar & corn syrup until combined. Remove from heat, add vanilla and baking soda and mix well. Add popcorn, mixing well until completely coated. Pour popcorn onto two greased or lined baking sheets in a single layer so the popcorn doesn’t get too clumped together. Cool then serve for soft caramel popcorn OR for crunchier popcorn bake in 350 degree oven for 15-2o mins.
Mmmmm…and wrapped in cellophane bags tied with ribbons make great favours at wedding & baby showers.
Oooh and another sweet treat at parties is of course candy table “bars”…..place all your favourite candies & treats in mason jars, glass dishes, decorative plates and glass vases. Use different heights and containers and use the candy as decor like I did below for my daughter Niya’s baby shower having all the candy dishes on a serving tray with gum balls around all the vases…try placing matching colour candies together in each dish or place lollipops sticking up in troughs filled with sugar….don’t forget baggies with ties, string or ribbon and spoons & scoopers!
