Deep rooted mash

I am a lover of potatoes, I mean loooover of them! hahaha….BUT sometimes it’s nice to have an alternative to the starchy goodness…soooo I decided to try celery root, and it was delish….so much so that it tastes almost better than mashed potatoes (woot and fewer cals)…

Rooted mash

2 bulbs celery root (aka celeriac, I found them at Superstore)

1/2 head cauliflower 

1/4 cup milk

1/4 cup butter 

salt & pepper 

1 tsp celery salt 

Peel and cut celery root into small cubes. Cut cauliflower (larger than celery root as it would cook quicker). Boil both together in a large pot with water just covering the veg. Salt & pepper and cook for about 10 minutes or until all veg is tender. Drain any water and then mash. Add milk and salt and whip until smooth (I used an immersion blender but you could use a hand mixer or plain old masher but mash well)…Season with salt & pepper to taste and celery salt. Sooooo creamy and yummy, my husband said after eating it that I have upped my cooking game! hahaha….
