Banana Bread to steal a man’s heart!!

I made my remixed version of this banana bread recipe for my husband when we were dating and he said that was the moment he knew I would be his wife – haha….Original Best of Bridge Recipe plus my remix which is seriously such a crowd pleaser! I get asked about my recipe all the time…oooh plus one more version as well……3 banana bread recipes that you can’t go wrong with!

Best of Bridge Banana Bread

1 cup butter

2 cups white sugar

3 cups mashed *over ripe bananas (about 6)

4 eggs, well beaten

2 1/2 cups flour

2 tsp baking soda

2 tsp salt 

1 tsp nutmeg

*When a banana goes super brown throw it in the freezer until you have 6 to bake with, the browner the banana the better!

Beat butter & sugar until fluffy. Add mashed bananas and eggs, mix well. In a separate bowl combine flour, baking soda, salt & nutmeg then add to creamed banana mixture. Mix until combined but do not over mix (slight streaks of flour is ok).  Pour batter into two greased loaf pans or one loaf pan and a 12 muffin tin with muffin liners. Bake in a 350 degree oven for about 25 mins for muffins, 50 mins for loaf. Remove loaf and/or muffins when a toothpick inserted into the middle comes out clean (do not under bake). 

Now for the upgraded version….my remix!…with a touch of crunchy goodness on top..

MK remix

1 cup butter

3/4 cup white sugar

3/4 cup brown sugar (adds rich flavour & I find 2 c sugar too sweet)

3 cups mashed over ripe banana 

4 eggs, well beaten 

2 1/2 cups flour

2 tsp baking soda

1 tsp salt 

1 tsp nutmeg

1 tsp cinnamon

 

Crumble topping: Crumble together 3 tbsp butter, 1/4 cups oats and 1 tbsp brown sugar until the mixture resembles peas (I use my hands to incorporate the butter into the oats until it’s mealy). 

 

Follow baking steps as above, top with crumble and bake – sooooooo yummy with the crunchy topping. 

 

Optional add ins: Mix blueberries, mini chocolate chips or nuts into the batter before placing into prepared pans. 

 

Ok and one more super yummy remix….COCONUT!

Coconut Banana Bread

1 cup butter 

3/4 cup white sugar

3/4 cup brown sugar

3 cups mashed over ripe bananas

2 eggs, well beaten 

1 cup canned coconut milk (makes it so creamy and sweet)

2 1/2 cups flour

2 tsp baking soda

1 tsp salt

1 tsp nutmeg

1 tsp cinnamon

1/2 cup shredded coconut

Bake as above, with or without the topping and/or top with coconut.

SO YUMMY!!! You might not want to share  – hahaha….

The pic below is of the coconut banana bread with the crumble topping. It really does add a nice textural element to the moist banana bread and it’s totally unique!
