Tomato Sauce 3-way

This tomato recipe can be made in one large batch (double or triple this recipe for two or three uses) then turned into 3 great recipes including – French bread Pizza (yum)!

Tomato sauciness

1 tbsp oil

1 onion diced

4 garlic cloves minced

1 green pepper diced (want it hot, also add a jalapeño diced)

1 zucchini diced

1 large can crushed tomatoes

1 small can tomato paste

Fresh or dried herbs: I like oregano & basil (one bunch fresh or about 1 tbsp dried)

salt & pepper to taste

Dried chillies and hot sauce for some heat (optional)

Meat eater? Add 1 package ground beef, chicken or turkey and sautee with the vegetables before adding tomatoes.


Heat oil and sautee onion for 2-3 minutes. Add garlic, green pepper & zucchini and cook for another 5 minutes until veg starts to get tender. Add canned tomatoes (or fresh – about 5) along with paste and cook down for about 10-15 minutes. Add herbs, salt and pepper and chillies to taste and cook for another 5 minutes. Add dried chillies and hot sauce if you like it hot!


Use this sauce for the following 3 meal ideas:

French Pizza

I didn’t think pizza could get any better – this French pizza is so worth trying…

1 loaf French Bread

1 recipe Tomato sauciness

1 tomato sliced

1/4 cup sliced olives

1 cup shredded cheese (mozzarella, old cheddar or havarti)

Optional toppings: mushrooms, pineapple, sliced peppers, ham..

Cut French bread loaf in half lengthwise. Top with sauce then layer on tomatoes, olives (or mushrooms or pineapple – whatever pizza toppings you choose) and cheese. Bake in a 400 degree oven for about 10 minutes or until cheese is nice and melty.





Baked pasta

1/2 package noodles (I used brown rice pasta spiral noodles)

1 recipe Tomato sauciness

Pre-cooked veg (sautee asparagus, broccoli, kale or any veg you like)

1 cup shredded cheese

Cook pasta per instructions less 2 minutes. Meanwhile steam or sautee your favorite veg. Toss pasta, veg and sauce into a baking dish. Top with cheese and bake in a 400 degree oven for about 20 minutes.





Stuffed Peppers

4 green or red peppers seeded, cut in half

1 tbsp oil

1/2 onion diced

1 recipe tomato sauciness

1/2 cup cooked brown rice, couscous or quinoa

1/2 can black beans

1 tsp cumin

1 tsp chilli powder

1 tsp paprika

1 tsp dried oregano

salt & pepper to taste

Optional add ins: Corn, spinach, grated carrot, diced roasted pablano peppers (toss lightly with oil & roast in 400 degree oven for 20 mins, cover with tinfoil so the steam softens the skin so you can easily peel it – yum!)


Place cut peppers in a 9’x 13′ baking dish and add 1 tbsp water to the bottom of the dish. Cover in foil, cook for about 15 mins until slightly soft, remove from oven. Meanwhile sautee the onion in oil for about 5 mins. Add tomato sauciness, rice, beans, add ins and spices. Salt & pepper to taste. Once heated through stuff pepper halves then top with grated cheese. Bake in 400 degree oven for about 15-20 mins.

One great sauce three ways!..Also freezes well!!
