One of my husband’s favourite desserts is a warm apple pie or apple crisp with vanilla bean ice cream on top…melting down into….the sweet apples – yum! I recently made a few other fruit combos and they were all delicious…
1 large apple per person so let’s say this is for 6 people:
1 tsp cinnamon
2 tbsps brown sugar
For crisp topping:
2 cups quick cook oats
1/2 cup butter
1/4 cup brown sugar
Peel & dice apples (use gala, green, Macintosh…any medium firm apple) and toss with cinnamon and brown sugar in your 9” x 13” baking dish (or for one use an oven safe soup bow or 8” square for 4). In a large bowl, mix butter, oats and brown sugar. I use my hands to make sure the butter crumbles up nicely with the oats but that the butter is not smoothly incorporated (should resemble the size of peas) – you want a crumbly topping. Pour crisp over apple and bake in a 350 degree oven for about 30 minutes….

Peach and/or Nectarine
Peach Blackberry…or any fruit combo you want with any of these fruits
Top with ice cream forsure! Brings out the sweetness of the fruit!
